The many lives of Greek village pies

Phyllo, greens and the ingenuity of home cooks · Original Greek Food Table editorial

Across Greece, savoury pies have long turned seasonal ingredients into portable meals. A handful of greens, herbs and cheese becomes a feast when enclosed in crisp pastry. Some regions favour thick handmade sheets; others use delicate commercial phyllo.

A living tradition

Spanakopita is a familiar example, but the broader tradition includes pies filled with wild greens, leeks, pumpkin or cheese. A pie can be eaten warm from the oven or carried on a journey and enjoyed at room temperature.

Bring it to your kitchen
